Stuffed avocados

Ingredients
- 2 avocados
- 2 tomatoes
- Juice of 1 lemon
- 100 g low-fat feta cheese
- 1 shallot
- 1 bunch of chives
- 1 tablespoon olive oil
- 4 black olives
- Mint leaves for garnishing
- Salt and pepper
Method
- Cube the tomatoes, dice the feta cheese, and mince the shallot.
- Cut the avocados in half, scoop out the flesh, and mash it with a fork. Discard pit. Keep the shells.
- Add the lemon juice, feta, shallot, tomatoes, chives, and olive oil.
- Stuff the avocado shells with the mixture and garnish with black olives and fresh mint.
